Corn Fritters
We had these all the time as kids. I can't remember the last time we've made them lately, though.
Ingredients:
2 Eggs 1 tsp Salt
½ tsp Baking Powder 6 Tbsp. Flour
1 can Corn Butter or Shortening
Method: Mix first four ingredients together to make a slightly thick batter.
Drain canned Corn.
Add Corn to batter and mix thoroughly.
Heat a few Tbsp. of Butter or Shortening in a skillet.
Spoon about a ¼ of the mixture into skillet and form into a disk.
Fry both sides golden brown.
Serve hot.
